VILLAGE -STYLE FRIED CHICKEN

INGREDIENTS: 1] Salad oil 2 tbsps 2] Chicken breast 500 grms 3] Green peppers [cut into cubes 1" cube pieces] 3 4] Cornstarch 2 tbsps 5] Water 1 tbsp 6] Salt 1/2 tbsp 7] Cooking wine 1 tbsp 8] Vinegar 3 tbsp 9] Soy sauce 1 tbsp 10] Sugar 2 tbsps 11] Ginger 50 grms [crushed] METHOD: 1] Wash the chicken breast and then lightly pat to remove excess moisture.Cut the chicken into small bits. 2] In a small bowl, combine the chicken, salt ,ginger and cooking wine and let it sit for 20 mins. 3]In a large skillet or pan, heat the salad oil over medium heat.Add the chicken bits and stir for 5 mins. 4] Add the pieces of pepper and soy sauce. Stir for 3 mins. 5] Mix the cornstarch and water, then add to the chicken pieces and stir constantly until desired thickness. 6] Add the sugar and vinegar. FEATURE; It is fragrant, like something in chinese country side. TASTE; It is delicious and refreshing and goes well with steamed rice.

Hello Hello Hello Hope you all missed me while I was away. The past few months were a bit hectic and blogging just didnt make it high on the priority list. Meanwhile our family has been blessed with a little angel called RAIMA [my grand-daughter]. So we are all rejoicing her arrival into our family. I am now back in mombasa with my parents who are here on a holiday. I begin this season with one of my son-in-law's favorite- sweetcorn chicken soup. And here's the recipe for all my lovely readers. Try it, its very simple and need I say, very very delicious................... Sweet Corn Soup (serves 6-8) INGREDIENTS: 1. Chicken stock 1 lt. 2. Boneless chicken 1 1/2 cups [chopped very fine] 3. Hello everyone,hope you all are trying my microwave cooked dishes.Please do give me your opinion as I am anxiously waiting for that...... INGREDIENTS: 1. Boneless chicken 200grms [cut in 1 1/2"pieces] 2. Garlic 1 tbsp [very finely crushed] 3. Ginger paste 1 tsp 4. Chopped corriander 2 tbsp 5. Sauf [aniseed] 1/2 tsp 6. Dry mango powder[amchur] 1tsp 7. Red chilli powder 1tsp 8. Nutmeg powder 1tsp 10.Cream 4tbsp 11. Oil 1tbsp 12. Cornflour 1tsp 13. I hear every now and then, the 21st century methods of cooking and there comes and goes a buzz about microwave cooking all the time. Back in the days, everyone had their doubts of all the new gadgets that technology brings along. However, with the busy lifestyles that everyone goes through now a days, I realise I should try newer techniques too. And this is one of those dishes which I tried making in the microwave and you know what? everyone quite liked it . So why dont you guys also give it a try. And frankly speaking, I am really enjoying my microwave adventures. Hope you experience the same.......... INGREDIENTS 1. Meat or chicken mince[keema] 200grms 2. Basmati rice 1 cup 3. GINGER CHICKEN

Dear friends, Recently I have been trying out some microwave cooking.Its really a very fast way of getting ones cooking down.So I think you can also try this dish and send me your opinion....... INGREDIENTS: 1. Chicken 400grms [boneless] 2. Soya sauce 3 tbsp 3. Ginger 11/2"piece [grated] 4. Ginger 11/2"piece [thinly sliced] 5. Spring onion 1 small bunch [chopped fine] 5. Sherry 2 tbsp [optional] 7. Ajinomoto 1/2 tsp 8. Salt 1/2 tsp 9. Pepper 11/2tsp 10. Cornflour 2 tbsp 11. White oil 2 tbsp METHOD: In a shallow dish mix oil,chicken,grated ginger,sherry,spring onion and soya sauce. Cook in the microwave[high] covered for 4 mins. Add salt,pepper and sliced ginger. Mix well. Dissolve cornflour in 2-3 tbsp water. Add to chicken and mix well. Again microwave on high, uncovered for 3 mins. Let it stand for 2 mins. Mix well and serve with a little spring onion sprinkled on top. PS: You can also try making ginger fish and ginger prawns with the same recipe.Cooking time is the same.

BENGALI SWEET CURD/YOGHURT [MISHTI DOI]

Hi! everyone,yesterday learn't this typical Bengali sweet dish from one of my friends.For bengalis this sweet dish is a must in every elaborate festival or celebration. Ofcourse in Kolkata , it is readily available in every sweet-meat shop, so no one tries to make it at home. But here thousands of miles away from home, we do crave for such things. While discussing mishti dahi with my friend, she gave me this easy way of making it. I added in a little of my touch also and it turned out to be so delicious. My earnest request to my viewers is, please do try it. One just cant go wrong with this dessert......... INGREDIENTS: 1. Friends, these days the American corns are available in the market in abundance.Its not only tasty but also healthy for everyone.So try this dish and serve a tasty treat to your loved ones. INGREDIENTS: 1. Sweetcorn 3 big size [boiled in the pressure cooker for 10mins] 2. Onion 1large [chopped fine] 3. Garlic 4 pods [crushed] 4. Green chilli 1[chopped] 5. Red chilli flakes 1tsp 6. Butter 1 tbsp 7. Dry mango powder 1 tsp 8. Roasted cumminseed 1tsp 9. Lemon juice 1tbsp 10. Fresh corriander leaves 1/4 cup[chopped] 11. Green peas 1 cup[boiled] 12. Tomato 1 [chopped after removing the skin] 13. Salt and sugar to taste 14. Chat masala 1tsp METHOD: Scrape the boiled corn. Heat butter in a nonstick pan. Fry the garlic till golden brown.
